2023 ACU Cup China Area Free Brewing Tournament Championship will be held soon. ●比赛目的:

● Purpose of Competition:

本次赛事旨在增进中韩间咖啡行业的专业化交流,为长春市咖啡行业的发展注入新的活力和动力,为咖啡从业者提供一个展示自我、切磋进步的平台。同时,广大咖啡爱好者们也可以通过大赛感受更多咖啡冲煮体验——手冲咖啡、虹吸壶萃取、摩卡壶萃取等,更了解咖啡、喜欢咖啡、并享受咖啡。

The competition aims to enhance the professional exchanges between China and South Korea in the coffee industry, inject new vitality and impetus into the development of Changchun's coffee industry, and provide a platform for coffee practitioners to showcase their skills, learn from each other, and make collective advancements. In addition, coffee enthusiasts can indulge in a wide range of coffee brewing experiences during the competition, including pour-over coffee, siphon extraction, moka pot extraction, and more. This offers them the opportunity to deepen their understanding of coffee, cultivate a passion for it, and truly savor the joy.

二、大赛选手规定

II. Rules of Players

 

1、预赛选手规定

1. Rules for preliminary players

1)比赛器具:与萃取有关的器具由选手本人准备;冲煮器具、磨豆机、热水器、水、电热水壶、杯子,只能使用大赛的统一设备。

(1) Competition equipment: Players are responsible for preparing their own equipment related to extraction. However, for brewing apparatus, grinder, water heater, water, electric kettle, and cups, only the unified equipment provided by the competition should be used.

2)选手有5分钟的准备时间,和10分钟的萃取时间,超过规定时间,将被取消比赛资格。

(2) Players are allowed a total of 5 minutes for preparation work and 10 minutes for extraction. It's important to note that any player who exceeds the specified time limit will be disqualified.

3)所有选手比赛过程,将使用大赛指定的咖啡豆。

(3) All the players should use the coffee beans specified in the competition.

4)演示后提交的咖啡总量,以300ml以上为基准。萃取配方由选手自行决定,萃取后允许掺水。

(4) The total amount of coffee submitted after the demonstration shall be benchmarked on 300ml or more. The extraction formula can be determined by the players themselves, and water is allowed to add to the coffee solution after extraction.

5)将萃取好的每杯咖啡,直接提供到评委桌上。

(5) Put each cup of coffee extracted directly to the judges' table.

(萃取时间:不是指演示结束后选手结束冲煮的时间,而是指放到评委的桌子上为止的时间。)

(Extraction time: Please note that the extraction time refers to the duration until the coffee is placed on the judges' table, rather than the time when the player completes the brewing process after the demonstration.)

6)允许在准备时间内调整磨豆机。

(6) It is allowed to adjust the grinder in the course of preparation.

7)只允许使用大赛组委会指定用水。

(7) Only water specified by the Organizing Committee of the Championship is allowed to be used.

8)萃取方式需要有香味、味道等说明,8月之前提交给评委。

(8) The extraction method should include descriptions of fragrance, taste, and other relevant details, and must be submitted to the judges before August.

2.进入决赛选手的规定

2. Rules for finalist entry

决赛共有8名选手晋级进行比赛。

A total of eight players will be shortlisted as finalists for the competition.

(1)决赛进行结果第一名至第四名将确定获奖者,其余选手将获得鼓励奖。

(1)The prize-winners will be positioned in the first to fourth place in the finals, and the rest of the finalists will receive the Incentive Award.

2)决赛有5分钟的准备时间,和15分钟的萃取时间。如果超时,将被会取消资格。

(2) The finalists only have 5 minutes for preparation work, and 15 minutes for extraction in the finals. Players who exceed the time limit will be subject to disqualification.

3)所有的品鉴,都以感官评价方式进行,得分最高的人获胜。

(3) All tastings shall be conducted by sensory evaluation, and the finalist with the highest score wins.

4)对4名评委的分数进行合计评价。 

 (4) Calculate the cumulative scores from the four judges for evaluation.

5)与萃取有关的器具由选手本人准备,但冲煮器具、磨豆机、热水器、水、电热水壶,需要使用会场内的指定设备。

(5) The equipment related to extraction shall be prepared by the finalists themselves, but the brewing apparatus, grinder, water heater, water and electric kettle can only use the designated equipment in the venue.

6)演示后提交的咖啡总量,以300ml以上为基准。萃取后允许加水。

(6) The total amount of coffee submitted after the demonstration shall be benchmarked above 300ml. The water is allowed to add to the coffee solution after extraction.

7)提取配方由选手自主选择。

(7) The extraction formula can be selected by the finalists themselves.

8)萃取出来的咖啡,选手直接将萃取后的咖啡提供给评委桌上。

(8) The finalists will present the extracted coffee directly on the judges' table.

注:不是演示结束后选手结束冲煮的时间,而是放到评委的桌子上为止的时间。

Note: Please note that it refers to the duration until the coffee is placed on the judges' table, rather than the time when the player completes the brewing process after the demonstration.

9)有萃取方式的香味、味道等内容,需要与大会评委员提交的内容相同。选手如改变萃取方式,应在比赛开始前2小时重新提交。

(9) The fragrance, taste and other contents of the extraction method shall be the same as those submitted by the judges of the championship. Any change in extraction method should be resubmitted 2 hours before the start of the championship.

3、参赛者注意事项

3. Precautions for Players

1)所有参赛者必须彻底阅读和理解亚洲咖啡联盟比赛选手规程。

(1) All players must thoroughly read and understand the Asian Coffee Union competition rules and regulations.

2)参赛者在比赛开始前1小时到达比赛地点。

(2) Players must arrive at the venue 1 hour before the start of the competition.

3)因不熟悉规定、或搞错规定而产生的不利影响,将由参赛者本人承担。如有疑问或混乱之处,可以在选手微信群里进行提问。

(3) Any adverse effects arising from unfamiliarity with or any mistakes in the regulations shall be borne by the players themselves. For any doubt or confusion, you can make inquiries in the players' WeChat group.

 

4、取消资格列表

4. Disqualification list

1)饮酒后不能参加比赛,不能使用妨碍香味评价的香水或化妆品等;不遵守规定的选手将被取消资格。、

(1) It is forbidden to participate in the competition after drinking. It is not allowed to use perfume or cosmetics that may disturb the evaluation of fragrance. And the players who do not comply with regulations will be disqualified.

2)在休息室或比赛会场吸烟者,将被取消参赛资格。

(2) Players who smoke in the lounge or competition venue will be disqualified.

3)辱骂其他队伍、观众、评委,一经发现,将会被取消资格。

(3) Players who are caught abusing other teams, spectators or judges will be disqualified.

4)参赛者必须在规定的准备时间前1小时,到达选手休息室。到比赛开始30分钟前没出现在现场的选手,将被取消参赛资格。

(4) Players must arrive at the players' lounge 1 hour before the specified preparation time. Players who do not show up 30 minutes before the start of the competition will be disqualified.

5)如未能在演示时间内提供萃取的咖啡,将被取消参赛资格。

(5) Failure to provide extracted coffee within the demonstration time will result in disqualification.

6)除了萃取的咖啡外,如果混合香料等任何东西,将被取消参赛资格。

(6) Players will be disqualified if they mix anything other than the extracted coffee, including spices or any other additives.

7)在比赛过程中,如将大赛使用的器物掉在地上,将被取消参赛资格。

(7) During the competition, any player who accidentally drops any object used in the competition on the ground will be disqualified.

8)达到标准萃取总量不超过300ml时,将被取消参赛资格。

(8) Players who fail to achieve a total extraction amount of 300ml or less will be disqualified.

 

5、指定比赛

5. Specified competition supplies

1)参赛者只能使用比赛指定的咖啡豆、杯子和水。

(1) Players can only use the coffee beans, cups and water specified in the competition.

2)提供的咖啡豆:埃塞俄比亚·耶加雪菲·橙花。

(2) Coffee beans provided: Ethiopian Yirgacheffe Neroli.

 

6、提供的“器具/工具

6. "Appliances/tools" provided

1)在指定的比赛准备时间5分钟和萃取时间10分钟内,允许安装或使用可能的萃取工具,但不得超过指定的桌位范围。

(1) The installation or use of possible extraction tools is permitted within 5 minutes of the specified competition preparation time and 10 minutes of the extraction time, but not beyond the specified table range.

参赛选手必须带来以下事项:

-磨豆机(可自备,也可以使用会场准备的)

- Grinder (Players may bring their own grinder or use the one prepared at the venue)

-杯测勺、测试杯

- Cup measuring spoon, test cup

-吧台毛巾/清洁毛巾(练习用/演示用)

- Bar towel/cleaning towel (for practice/demonstration)

-清洁工具(吧台清理刷、磨豆机刷等)

- Cleaning tools (bar cleaning brush, grinder brush, etc.)

-托盘(评委服务用)

- Tray (for judge service)
